The Bermar preservation system we have at Nobu is used to reseal the wine and Champagnes we sell by the glass. After 15 years it still works perfectly which demonstrates truly fantastic longevity - not many pieces of equipment last that long in my bars! It's a testament to the incredible reliability of the system and the impressive build quality.

We introduced the Bermar preservation system in order to help us grow our wine sales and minimise our wastage, it absolutely makes financial sense but more importantly for me as a manager it gives me the peace of mind that all our wines by the glass are served in perfect condition and tasting as well as they could possibly taste. This system and reassurance means that we have expanded our range of wines by the glass and we're able to push for more exotic and interesting wines which means that our clientele keep coming back to us and our list doesn't get stale. We currently sit 4.5% above our sister bars for wine sales and way ahead of our target sales for wine. The minimisation of wastage is a huge factor in me being able to expand our BTG range, I've yet to have any wine go out of condition while it's been open and that alone is a game changer. I would absolutely recommend Bermar to everyone because financially it's a no-brainer but it's enabled me personally to grow my business in the exact way I wanted to.

We wanted more control of the Champagne that we have opened by the glass and a Bermar preservation system already has helped reducing it. We have seen a clear reduction in our waste. Due the Bermar system we now offer Taittinger Comtes de Champagne by the glass which is a great success! I would strongly recommend a Bermar preservation system as it enables restaurants to offer a wider range of sparkling wines by the glass by diminishing wastage.

Our Le Verre de Vin System has been a great investment and we have managed to increase our wines by the glass from the normal few options of red, white and just one rose wine to over 30 wine and Champagnes by the glass. We have also managed to increase the quality and styles of wine and Champagnes that we offer by the glass and currently suggest two bottles of wine to accompany set dinners, we hope that with more staff training we will be able to increase the number and also quality and variety even further.
